Rhubarb Salsa

Fresh rhubarb in season and I don’t know what to do with it beside making a pie.  So I chewed on it a bit and decided it would make a fresh and tart salsa.  It’s so refreshing that if you don”t add any fresh pepper it would make a nice cool down condiment to a spicy Mexican dish.  Or Indian.

The measurements just depend on how much salsa you want to make really so don’t get too technical : )

Chop up a few stalks of rhubarb and add them to a pot of boiling water for a count of 30.  Drain and rinse with cold water to stop the process.

Now dice your slightly softer rhubarb and put in a mixing bowl.

Add the following:

Finely chop 1/2 onion

Finely chop 1/2 red bell pepper

chop 1/4 cup fresh cilantro

juice from 1/2 lime

2 tbls raw sugar

1 tsp salt

This next part is personal preference.  You can add jalepeno or other pepper if you are using it like a spicy salsa with chips etc.  The kick factor is up to you.  Enjoy.

I grew up a vegetarian in So Cal. I lived for quite a few years in NYC and now I live in Atlanta, GA. I guess these various regions have had an affect on my cooking/eating style.
