Summer Cocktails Old and New

I have two classic summer refreshers and two newbies.  this photo is a Mango Frozen Margarita.  Very tasty, fruity and fresh.  I am a classic margarita gal – on the rocks with salt etc – but this mango slurpee is sosatisfying.  I think we are in for a long, hot, crazy summer this year and I imagine it will go a bit smoother if we keep a blender full of these around : )

1 1/2 cups diced, peeled ripe mango

3 oz (about 1/2 cup) white tequila ( or whatever is on hand…)

1 oz (2 tbls) Cointreau or other orange liqueur

3 tbls superfine granulated sugar

2 cups ice cubes

> Blend all ingredients in a blender until smooth.

mint julipThis is every bit the gentleman’s drink.  I am sorry I don’t have a silver Julep cup but… accepting donations ?

4 cups bourbon

2 bunches fresh mint

1 cup water ( preferably distilled)

1 cup granulated sugar

Powdered sugar

>Remove about 40 mint leaves and wash them.  Put them in a bowl or pitcher and cover with bourbon.  Leave in refrigerator over night.

Prepare the simple syrup by the quick microwave method – put water and sugar in glass bowl and microwave about a minute.  there should be no granulated sugar left.  Just sweet water.

Strain mint leaves from bourbon and squeeze through a paper towel or strainer over the bourbon to catch the minty drops.  Now add the syrup and let that stand several hours in the fridge.

To serve, fill rocks glass with crushed ice, stick mint sprig in ice and pour bourbon mixture to fill.  Garnish with powdered sugar on top.

tom collinsThis photo seems to show off my beautiful glass rather than the drink but I assure it is a beautiful cocktail – classic, refreshing, and sophisticated.

1 oz lemon juice

1 tsp superfine sugar

3 0z club soda

1 maraschino cherry

1 slice orange

>In a shaker half filled with ice cubes, combine the gin, lemon juice and sugar.  Shake well.  Strain into a collins glass filled with ice cubes.  Add the club soda.  Stir and garnish with the cherry and orange slice.

tequila mojito

8 fresh mint leaves

1 1/2 tbls superfine granulated sugar

1 tbls fresh lime juice

1 1/2 oz (3 tbls white tequila)

About sosatisfying

I grew up a vegetarian in So Cal. I lived for quite a few years in NYC and now I live in Atlanta, GA. I guess these various regions have had an affect on my cooking/eating style. Mexican food is certainly my comfort food - the more down home the better. Italian is my daily bread. And I love greens, grits and anything made better with Vidalia onions.
