Thai Curry Veg w Fresh Englsh Peas

I made this from fresh vegetables bought at the farmers market and it makes all the difference.  The freshly shelled peas are bursting with flavor as is the broccoli.  It makes a spectacular summer dish served with white rice and a lime wedge.

 

English peas, shelled fresh

Broccoli florets

Grape tomatoes

2 tblsp olive oil

1/2 yellow onion thinly sliced

2 garlic cloves finely chopped

1 fresh green pepper ( jalepeno type), finely chopped

1 tblsp curry powder

1 tsp red pepper flakes

juice of 1/2 lime

1 tsp freshly grated lime peel

1/2 can coconut milk ( I normally use ‘lite’)

DIRECTIONS

Heat olive oil in large skillet.  Saute onions till slightly clear then add garlic and finely chopped fresh green pepper.  Stir until everything is covered in oil and add curry powder, salt, and red pepper flakes.  Stir till everything is well blended.  Stir in vegetables till they are well coated with spices add lime juice and lime zest and cover with lid and let simmer  for several minutes.  Then add coconut milk and cook on med/low flame until vegetables are tender.   Serve with white rice.

I grew up a vegetarian in So Cal. I lived for quite a few years in NYC and now I live in Atlanta, GA. I guess these various regions have had an affect on my cooking/eating style. Mexican food is certainly my comfort food - the more down home the better. Italian is my daily bread. And I love greens, grits and anything made better with Vidalia onions.
