A friend of mine who grew up in Singapore told me she sautes fresh ginger in her scrambled eggs. I love ginger and couldn’t wait to try it myself. I decided to add rice and scallions for more complexity and the result was very tasty !
1/4 cup cold leftover rice
1 – 2 tblsp finely chopped fresh ginger
1 tblsp chopped scallion
1 tblsp canola oil
salt and pepper to taste
Saute fresh ginger, scallions and rice in canola oil. Whisk eggs in a small bowl and scramble in pan with rice etc. Add salt and pepper to taste.
